We can call this a recipe for “healthy fast food” because it does not require too much preparation and it only takes a few minutes to cook. Out of all the other courgette recipes, this one takes the shortest time.

Ingredients

  • 2 courgettes
  • 2 pieces of cream cheese
  • 1 egg
  • Salt, pepper and spices to taste

Preparation

  • First, choose the lightest courgettes, as they are the most ripe.
  • Then wash them and cut them into small, uniform pieces.
  • Cut the cheese into cubes and mix it with the egg in a bowl.
  • Now add salt, pepper, oregano or the spices you prefer. Don’t forget to add courgette!
  • Once everything is mixed together, bake it in the microwave for five minutes and you are done!
  • Now you have delicious food that may be best eaten with a salad or some rice.

This recipe is perfect for those who do not eat meat but still want delicious accessories for a salad.

Ingredients

  • 2 courgettes
  • Grate or flour
  • 3 eggs
  • Salt and pepper
  • Oil
  • Spices

Preparation

  • To begin with, cut the zucchini into slices that are approx. half an inch thick. Season with salt and let them stand for approx. 20 minutes.
  • Meanwhile, mix the eggs with spices in a separate bowl.
  • In addition to salt, you can add pepper, oregano, thyme, parsley, cumin or any other spice you want.
  • Dip each slice of courgette into the egg mixture and then grate or flour and shape them into meatballs.
  • Finally, fry them in oil, or if you prefer a healthier version, you can put them on a frying pan and bake them in the oven.
  • When they turn golden brown, they are done.
  • You can eat them with mashed potatoes, lettuce, rice, etc.

  • 1 kg zucchini
  • 1 clove of garlic
  • 1 onion
  • 2 teaspoons oil

  • 1 liter of vegetable broth
  • 5 dl rice
  • 3 teaspoons grated cheese
  • Salt, pepper, parsley, oregano, etc.

Preparation

  • Cut courgette into small cubes and fry with oil, garlic and spices.
  • Fry butter with onion in a separate pan, add rice and let it cook for approx. a minute.
  • Then add broth, season with salt and pepper and cook until rice is done.
  • Once the liquid has evaporated, add more butter, grated cheese and fried courgette.
  • Serve it hot and if you want, you can add a little more cheese on top!

  • 4 medium-sized courgettes
  • 1/2 onion

Preparation

  • Cut zucchini into small cubes and boil them in water and salt.

  • Beat the eggs in a separate bowl and add the onions, which you have previously cut into small pieces.

  • Then pour the mixture over the courgette.

  • 1/2 liter of water
  • 2.5 dl vinegar
  • Salt, oregano and crushed garlic
  • 2.5 dl oil

Preparation

  • First, cut the courgette into slices that are about half an inch thick.
  • Then boil them in a saucepan with water, salt and vinegar.
  • Let them cook until tender.
  • You can then layer them with spices, brush them with oil and use them in cooking.
  • You can also put them directly in a large glass jar with a lid and put them in the fridge.
  • Then they can be enjoyed on biscuits or toast.
