Pudding is a traditional dessert that today has many versions to choose from. The most classic recipe consists of milk, sugar and eggs, which you make in a baking tray with a water bath.

Sometimes you can taste the mixture and add other ingredients like fruit, cakes or even mushroom cake. By doing so, you can develop equally delicious desserts, such as pudding with chocolate, pineapple or orange.

The version that we will present to you today contains walnuts. These nuts are well known for their innumerable nutrients and health benefits. In addition, they provide a surprising contrast of flavor and a very creamy texture when you make pudding with them.

It’s a very easy recipe to make! All you have to do is mix the ingredients and let them bake in the oven until it reaches the ideal point, making it an ideal dessert for special occasions and meals.

The ingredients for a delicious walnut pudding

The following ingredients are for making 8 servings:

  • 750 ml milk
  • 5 eggs
  • 200 grams of sugar
  • 100 grams of peeled walnuts
  • 150 grams of cookies
  • 1 teaspoon vanilla essence

To prepare the caramel for the base, use:

  • 100 grams of sugar
  • 3 tablespoons water

How to make your walnut pudding

  • Turn the oven to 175 degrees before starting and put a tray of water into it. It must be large enough to put the pudding on top.
  • The next step is to prepare the caramel for the base. To do this, place a pot on the stove and add the sugar and water. When the edges start to get a dark tone, stir the contents a little to achieve a homogeneous mixture. Then pour it into the bottom of the mold, being careful not to burn yourself.
  • To make the base, beat the eggs out into a bowl. Mix them very carefully with the sugar until you get a more or less uniform dough. Then add the milk and vanilla essence. You do not have to whip it because you do not want it to become frothy.
  • Crush the cookies and nuts with a hand mixer or food processor and mix them into the liquid ingredients.
  • Pour the mixture into the mold with the caramel and bake it in the oven for approx. 45 minutes. To know if the walnut pudding is ready, stick it in with a toothpick or a sharp knife. If it comes out clean, the dessert is ready.
  • Let it cool a bit and place it in the fridge. To get a perfect dessert, let it rest for 24 hours in the fridge before eating it.

For people with lactose intolerance, you can use lactose-free cow’s milk or a vegetable almond drink. In addition, you can also use gluten-free cookies to make the recipe celiac-friendly.

How to complete your pudding

Walnut pudding is a dessert that will surprise and please your guests thanks to its delicate taste and texture. However, this can all be ruined if you ruin the mold when you make it. While the taste remains the same, the presentation will not be as attractive.

An important point to prevent this from happening is to wait until the pudding is cold before taking it out of the mold. Storing the dessert in the refrigerator for at least 6 hours is the ideal time to prevent it from breaking when you take it out.

When serving, run a thin knife around the edges. You do not have to reach all the way down to the bottom because the part that is most stuck is the top. Then place a flat plate over the mold and turn it over quickly.

Place it on a level surface and carefully remove the mold. If it still can not get out, the problem may be due to the caramel. To fix it, place the mold in a tray with a little warm water for 10 seconds to soften it. Then dry the mold and continue to try to turn it as before.

The last hand

Once you have removed your walnut pudding from the mold, it is time to serve it at the table. There are many possible types of accessories and decorations to make it look perfect.

One option is to serve it with whipped cream or a little chocolate syrup on top. You can also cut some slices of strawberry or baked apple with cinnamon as these are flavors that go well with it.

If you have more time, set aside a few halved walnuts. Caramelize them with a little water and sugar, and when they are dry, place them on top of the dessert. They add a little extra sweetness and a crisp texture.

Whatever the case, the walnut pudding is in itself a wonderful dessert that looks great at the end of a meal and will definitely surprise all the guests.
